Single-phase AC supplied to winding, does not produce the rotating magnetic field. So we add starter winding which will be out of phase to primary winding by 90 degrees. To maintain the phase difference between two winding magnetic flux, the Starting winding is more resistive than running winding. Also starting winding have the number of turns and conductor size will be less and whereas running winding has fewer turns and the size of the conductor will be large compared to starting winding.
This now becomes a 2 phase motor. A two-phase supply produces a rotating magnetic field hence the rotor experiences the initial torque required. Once the fan speed picks up, secondary or starter winding is cut off (this is done by using a centrifugal switch) this is done because it will be inefficient to keep running as 2 phase motor.

How to connect the capacitor in the ceiling  fan:




The ceiling fan motor has two windings, main and auxiliary. One of the terminals of windings is common and say, connected to neutral. The capacitor is used to get 90 degrees out of phase supply, it is generally called a capacitor start motor. The main winding is directly connected to phase while the auxiliary winding is connected to the phase through a capacitor that creates a 90 deg phase difference in currents flowing in two windings essential to create a rotating magnetic field which is elliptical. To make it nearly circular, the turns in auxiliary windings are increased.
